  1. Prepare the brisket
    Season the cubed brisket generously with salt and pepper. Heat the vegetable oil in a large Dutch oven over medium-high heat. Working in batches, sear the brisket until browned on all sides, about 3-4 minutes per batch. Transfer the browned meat to a plate.
  2. Cook the aromatics
    In the same pot, add the diced onions and cook until softened, about 5 minutes. Add the garlic and jalapeños, and cook for another 2 minutes until fragrant. Stir in the chili powder, cumin, and smoked paprika, and cook for 1 minute to toast the spices.
  3. Simmer the chili
    Return the browned brisket to the pot. Add the barbecue sauce, diced tomatoes, beef broth, beer (if using), brown sugar, and cocoa powder. Stir well to combine. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 3 hours, stirring occasionally.
  4. Reduce and thicken
    After 3 hours, remove the lid and continue to simmer for an additional 45-60 minutes, or until the brisket is fork-tender and the chili has thickened to your desired consistency. If needed, use a wooden spoon to break up larger pieces of brisket. Taste and adjust seasoning with salt and pepper.
  5. Serve the chili
    Ladle the hot chili into bowls. Serve with optional toppings such as shredded cheddar cheese, sour cream, diced red onions, sliced jalapeños, chopped cilantro, and lime wedges. Cornbread makes an excellent accompaniment.
