Instructions

  1. Prepare the sauce
In a small bowl, combine the oyster sauce, fish sauce, soy sauce, and sugar. Stir until the sugar dissolves and set aside.
  2. Cook the aromatics
Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and chopped chilies, stir-frying for about 30 seconds until fragrant but not burnt.
  3. Add the chicken
Add the chicken pieces to the wok and stir-fry for 4-5 minutes until they begin to brown and are almost cooked through.
  4. Add vegetables
Add the sliced onions and bell peppers to the wok, continuing to stir-fry for another 2-3 minutes until the vegetables begin to soften but still maintain some crispness.
  5. Pour in the sauce
Pour the prepared sauce mixture over the chicken and vegetables. Stir to coat everything evenly and allow it to simmer for about 1 minute. If you prefer a thicker sauce, add the cornstarch slurry and stir until the sauce thickens.
  6. Add the basil
Turn off the heat and add the fresh basil leaves, stirring quickly to wilt them in the residual heat. The basil should be bright green and just wilted, not overcooked.
