  1. Prepare the grill
    Preheat your grill to medium-high heat (around 400°F/200°C). Make sure the grates are clean and lightly oiled to prevent sticking.
  2. Make the herb butter
    In a small bowl, combine the softened butter, chopped chives, parsley, minced garlic, smoked paprika, and cayenne pepper (if using). Mix thoroughly until all ingredients are well incorporated. Set aside.
  3. Prepare the corn
    Brush each ear of corn with olive oil, ensuring they are evenly coated. Season with salt and black pepper, turning to coat all sides.
  4. Grill the corn
    Place the corn directly on the grill grates. Close the lid and cook for 10-12 minutes, turning every 2-3 minutes to ensure even charring on all sides. The corn is done when it has bright yellow color with some charred spots.
  5. Apply the herb butter
    Remove the corn from the grill and immediately brush generously with the prepared herb butter, allowing it to melt into the hot corn. Turn to coat all sides.
  6. Serve
    Transfer the buttered corn to a serving platter, garnish with any remaining herbs if desired, and serve hot with lime wedges on the side for squeezing over the corn just before eating.
