
Bacon and Cheese Popovers

Prepare the panPreheat oven to 450°F (230°C). Generously grease a 6-cup popover pan or muffin tin with vegetable oil, making sure to coat the sides and rims well. Place the greased pan in the oven to heat while you prepare the batter.

Make the batterIn a large bowl, whisk together flour, salt, and pepper. In another bowl, beat the eggs until frothy, then whisk in milk and melted butter. Gradually add the wet ingredients to the dry ingredients, whisking until the batter is smooth with no lumps. Let the batter rest for 10 minutes.

Add the mix-insGently fold in three-quarters of the crumbled bacon, three-quarters of the grated cheese, all of the chopped chives, and the garlic powder into the batter. Be careful not to overmix.

Fill the panCarefully remove the hot pan from the oven. Fill each cup about 2/3 full with batter. Sprinkle the remaining bacon and cheese on top of each popover.

Bake the popoversBake at 450°F (230°C) for 20 minutes, then reduce heat to 350°F (175°C) and bake for an additional 10 minutes or until popovers are golden brown and puffed. DO NOT open the oven door during the first 20 minutes of baking or popovers may collapse.

Serve immediatelyRemove popovers from the oven and carefully take them out of the pan. Popovers will be very hot and steamy inside. Pierce the side of each popover with a small knife to let steam escape. Serve hot for the best texture and flavor.
