
Cheddar and Herb Popovers
Light, airy rolls with sharp cheddar and fresh herbs

Prepare the popover panPreheat oven to 450°F (230°C). Generously grease a 6-cup popover pan or muffin tin with butter, making sure to coat the edges and rims well. Place the empty pan in the oven to heat for 5 minutes.

Mix the batterIn a large bowl, whisk the eggs until frothy. Add the milk and melted butter and whisk to combine. Gradually add the flour and salt, whisking until the batter is smooth with no lumps. The consistency should be similar to heavy cream.

Add cheese and herbsFold in 3/4 cup of the grated cheddar cheese, reserving 1/4 cup for topping. Add the chopped chives, thyme, garlic powder, and black pepper. Stir gently until just incorporated.

Fill the popover cupsCarefully remove the hot pan from the oven. Working quickly, fill each cup about 2/3 full with batter. Sprinkle the remaining cheese on top of each popover.

Bake the popoversReturn the pan to the oven and bake at 450°F for 15 minutes. Without opening the oven door, reduce temperature to 350°F (175°C) and continue baking for an additional 15 minutes until popovers are golden brown and puffed.

Serve immediatelyRemove popovers from the oven and carefully take them out of the pan. Pierce each popover with a small knife to allow steam to escape and prevent collapse. Serve hot and fresh for the best texture and flavor.
