
Blue Cheese and Walnut Popovers
Light, airy pastries filled with savory blue cheese and walnuts

Prepare the oven and pansPreheat the oven to 450°F (230°C). Generously grease a 12-cup popover pan or standard muffin tin with butter, making sure to coat the rims and inside of each cup thoroughly.

Mix the batterIn a large bowl, whisk together the flour and salt. In a separate bowl, whisk the eggs until frothy, then whisk in the warm milk and melted butter. Gradually add the wet ingredients to the dry ingredients, whisking constantly until the batter is smooth with no lumps. Let the batter rest for 10 minutes.

Add the cheese and walnutsGently fold 3/4 cup of the crumbled blue cheese, 1/2 cup of the toasted walnuts, 1 tablespoon of thyme leaves, and black pepper into the batter, being careful not to overmix.

Fill the pansFill each prepared cup about 2/3 full with batter. Don't overfill as the popovers will rise dramatically during baking.

Bake the popoversPlace the pan in the preheated oven and bake for 20 minutes at 450°F. Without opening the oven door, reduce the temperature to 350°F (175°C) and continue baking for an additional 10 minutes until the popovers are golden brown and puffed.

Add the toppingsRemove the popovers from the oven and immediately pierce the top of each with a small knife to release steam. Top each popover with the remaining blue cheese, walnuts, and thyme leaves. Drizzle with honey if desired.

ServeServe the popovers immediately while hot and puffed. They are best enjoyed fresh from the oven as they will gradually deflate as they cool.
