
Blue Cheese Stuffed Mushrooms
Savory mushroom caps filled with tangy blue cheese mixture

Prepare the mushroomsPreheat oven to 375°F (190°C). Clean mushrooms with a damp paper towel. Carefully remove stems, chop them finely, and set aside. Place mushroom caps on a baking sheet, hollow side up.

Make the fillingHeat olive oil in a skillet over medium heat. Add onions and cook until translucent, about 3-4 minutes. Add garlic and chopped mushroom stems, cooking for another 2 minutes until fragrant and tender. Remove from heat and let cool slightly.

Create the cheese mixtureIn a medium bowl, combine softened cream cheese, crumbled blue cheese, cooked onion mixture, 1/4 cup of the breadcrumbs, parsley, thyme, salt and pepper. Mix thoroughly until well combined.

Stuff the mushroomsUsing a small spoon, fill each mushroom cap with the cheese mixture, mounding it slightly. Sprinkle the remaining breadcrumbs over the tops of the stuffed mushrooms and drizzle lightly with olive oil.

BakeBake in the preheated oven for 18-20 minutes, or until mushrooms are tender and the tops are golden brown and crispy. If needed, broil for the last minute to achieve a more golden top.

ServeAllow to cool for 5 minutes before serving. Garnish with additional chopped fresh parsley. Serve warm as an elegant appetizer.
