  2. Fry the plantains
    Heat vegetable oil in a skillet over medium-high heat. Once hot, carefully add plantain slices and fry for 2-3 minutes per side until golden brown and caramelized. Remove and place on paper towels to absorb excess oil. Sprinkle with a pinch of salt while still hot.

  4. Assemble the toast
    Spread a generous layer of avocado mixture on each toast slice. Top with fried plantain slices, arranging them evenly across the toast.

    Scatter red onion slices and chopped cilantro over the top of each toast. Drizzle with olive oil and add an extra pinch of sea salt and black pepper if desired.
