Make the peanut dressingIn a medium bowl, whisk together the peanut butter, rice vinegar, soy sauce, honey, sesame oil, lime juice, and sriracha until smooth and well combined. If the dressing is too thick, add 1-2 tablespoons of warm water to reach desired consistency.

Combine slaw and dressingPour the peanut dressing over the cabbage mixture. Using tongs or clean hands, toss thoroughly to ensure all vegetables are evenly coated with the dressing.

Add herbs and nutsAdd the chopped cilantro and most of the chopped peanuts to the slaw, reserving some peanuts for garnish. Toss again to incorporate.
