Instructions

  1. Prepare the vegetables
In a large mixing bowl, combine the sliced Napa cabbage, red cabbage, julienned carrots, sliced red bell pepper, and green onions. Toss gently to mix all vegetables evenly.
  2. Make the peanut dressing
In a medium bowl, whisk together the peanut butter, rice vinegar, soy sauce, honey, sesame oil, lime juice, and sriracha until smooth and well combined. If the dressing is too thick, add 1-2 tablespoons of warm water to reach desired consistency.
  3. Combine slaw and dressing
Pour the peanut dressing over the cabbage mixture. Using tongs or clean hands, toss thoroughly to ensure all vegetables are evenly coated with the dressing.
  4. Add herbs and nuts
Add the chopped cilantro and most of the chopped peanuts to the slaw, reserving some peanuts for garnish. Toss again to incorporate.
  5. Chill and serve
For best flavor, cover the slaw and refrigerate for at least 30 minutes before serving, allowing the flavors to meld. When ready to serve, transfer to a serving bowl and garnish with the remaining peanuts and sesame seeds.
  6. Adjust seasoning
Taste the slaw and adjust seasoning if needed. You may want to add more lime juice for acidity, sriracha for heat, or a pinch of salt depending on your preference.
