Prepare the string beansWash the string beans thoroughly and trim off the ends. Cut them into 2-inch pieces and set aside.

Cook the porkIf using pork, heat oil in a large pan over medium heat. Add the pork pieces and cook until they start to brown and render fat, about 5-7 minutes.

Sauté aromaticsAdd the sliced onions and minced garlic to the pan. Sauté until the onions are translucent and the garlic is fragrant, about 2-3 minutes.

Add the string beansAdd the cut string beans to the pan and stir-fry for about 2 minutes until they turn bright green.

Pour in the adobo sauceAdd the soy sauce, vinegar, water, bay leaves, and crushed peppercorns. Stir well to combine. Add sugar if using. Bring to a boil, then reduce heat to a simmer.

Simmer the dishCover the pan and let the mixture simmer for about 15 minutes, or until the string beans are tender but still have a slight crunch. Add more water if needed to prevent the dish from drying out.

Adjust seasoningTaste the sauce and adjust the seasoning by adding salt if needed. If the sauce is too acidic, you can add a bit more sugar to balance the flavors.

Serve hotRemove the bay leaves. Transfer the Adobong Sitaw to a serving dish and serve hot with steamed rice.
