  1. Prepare the mushrooms
    Clean all fresh mushrooms carefully with a damp cloth. Slice larger mushrooms into bite-sized pieces, leaving smaller ones whole. Drain the reconstituted dried porcini, reserving the soaking liquid. Strain the liquid through a fine sieve or coffee filter to remove any grit, and set aside.
  2. Make the broth base
    Heat vegetable oil in a large pot over medium heat. Add garlic, ginger, and white parts of green onions. Cook until fragrant, about 2 minutes. Add fresh mushrooms and cook until they begin to release their moisture, about 5 minutes, stirring occasionally.
  3. Develop the broth flavors
    Add Shaoxing wine or sherry and let it bubble for 30 seconds. Pour in the broth, reserved mushroom soaking liquid, soy sauce, and Sichuan peppercorns if using. Add the reconstituted porcini mushrooms and cilantro stems. Bring to a boil, then reduce heat and simmer for 45 minutes to develop flavors.
  4. Prepare the hot pot setup
    While the broth simmers, prepare your dipping ingredients. Arrange sliced meat, tofu, vegetables, and noodles on serving platters. Mix the dipping sauce ingredients in small individual bowls for each diner.
  5. Set up the hot pot
    Strain the finished broth through a fine-mesh sieve into a hot pot or electric hot pot set in the center of the table. Keep the broth at a gentle simmer. Return some of the cooked mushrooms to the broth for flavor and garnish with chopped green onions and cilantro leaves.
  6. Serve and enjoy
    Diners can cook their selection of ingredients in the simmering broth, dipping cooked items into their sauce bowls before eating. As the meal progresses, the broth becomes more flavorful from the various ingredients. Serve with steamed rice on the side if desired.
