Activate the yeastIn a large bowl, combine the warm milk, honey, and yeast. Let it sit for 5-10 minutes until foamy and activated.

Form the doughAdd the melted butter, egg, salt, and 2 cups of whole wheat flour to the yeast mixture. Mix well until combined. Gradually add the all-purpose flour and continue to mix until a soft dough forms.

Knead and riseTurn the dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Place in an olive oil-brushed bowl, cover with a damp cloth, and let rise in a warm place for 1.5 hours or until doubled in size.

Shape the bunsPunch down the dough and divide it into 8 equal portions. Shape each portion into a 5-inch long roll. Place the rolls on a parchment-lined baking sheet, leaving about 2 inches between each. Cover and let rise again for 45 minutes.

Prepare for bakingPreheat the oven to 375°F (190°C). Gently brush the tops of the rolls with the egg wash. Sprinkle with seeds if using.

Bake to perfectionBake in the preheated oven for 14-16 minutes, until golden brown and hollow-sounding when tapped on the bottom. Transfer to a wire rack to cool completely.
