  1. Prepare the dough
    In a large mixing bowl, combine flour, yeast, sugar, and salt. Add warm water and melted butter. Mix until a dough forms, then knead for 8-10 minutes until smooth and elastic. The dough should spring back when poked.
  2. First rise
    Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until doubled in size.
  3. Shape the buns
    Punch down the dough and divide into 8 equal portions. Roll each piece into a 6-inch log shape, slightly tapered at the ends to resemble hot dog buns. Place on a parchment-lined baking sheet, cover, and let rise for 30 minutes.
  4. Prepare the poaching liquid
    Preheat oven to 425°F (220°C). In a large pot, bring 8 cups of water and baking soda to a gentle boil. The baking soda will create the alkaline environment necessary for that distinctive pretzel flavor and deep brown color.
  5. Poach the buns
    Carefully lower each bun into the boiling water mixture for 30 seconds, turning once. Using a slotted spoon, remove them and place back on the parchment-lined baking sheet, allowing space between each bun.
  6. Add egg wash and salt
    Brush each bun with the egg wash, then use a sharp knife to make a diagonal slash across the top of each bun. Sprinkle with coarse salt immediately while the egg wash is still wet.
  7. Bake to perfection
    Bake in the preheated oven for 12-15 minutes or until deep golden brown. Transfer to a wire rack to cool completely before slicing and filling with your favorite hot dogs.
