Shape the bunsPunch down the dough and divide into 8 equal portions. Roll each piece into a 6-inch log shape, slightly tapered at the ends to resemble hot dog buns. Place on a parchment-lined baking sheet, cover, and let rise for 30 minutes.

Prepare the poaching liquidPreheat oven to 425°F (220°C). In a large pot, bring 8 cups of water and baking soda to a gentle boil. The baking soda will create the alkaline environment necessary for that distinctive pretzel flavor and deep brown color.

Poach the bunsCarefully lower each bun into the boiling water mixture for 30 seconds, turning once. Using a slotted spoon, remove them and place back on the parchment-lined baking sheet, allowing space between each bun.
