
Vietnamese Caramelized Eggplant
Sweet and savory eggplant stir-fry with aromatic spices

Prepare the eggplantCut the eggplants into 2-inch pieces. If using larger globe eggplants, cut them into 1-inch cubes. Optionally, soak in salted water for 10 minutes to reduce bitterness, then drain and pat dry.

Make the sauceIn a small bowl, combine the brown sugar, fish sauce, soy sauce, and water. Stir until the sugar is completely dissolved. Set aside.

Cook the eggplantHeat the vegetable oil in a large skillet or wok over medium-high heat. Add the eggplant pieces and cook for 5-7 minutes, stirring occasionally until they begin to soften and brown. Remove the eggplant and set aside, leaving some oil in the pan.

Sauté the aromaticsIn the same pan, add the minced garlic, ginger, and Thai chili peppers (if using). Stir-fry for about 30 seconds until fragrant, being careful not to burn the garlic.

Caramelize the saucePour the sauce mixture into the pan and bring to a simmer. Let it cook for about 2 minutes until it starts to thicken and caramelize, stirring constantly to prevent burning.

Combine and finishReturn the eggplant to the pan and toss to coat with the sauce. Cook for another 3-5 minutes until the eggplant is tender and has absorbed the flavors of the sauce. The sauce should cling to the eggplant pieces and be glossy.

Add finishing touchesTurn off the heat and stir in the lime juice. Toss half of the scallions and cilantro with the eggplant.

ServeTransfer to a serving dish and garnish with the remaining scallions and cilantro. Serve hot with steamed rice as a side dish or main course.
