  1. Prepare the vegetables
    Wash, peel, and cut all vegetables into uniform, bite-sized pieces. Having everything ready before you start cooking will make the process smoother.
  2. Sauté the aromatics
    Heat vegetable oil in a large pot over medium heat. Add the diced onions and cook until translucent, about 5 minutes. Add minced garlic and grated ginger, stirring for another minute until fragrant.
  3. Cook the vegetables
    Add carrots, potatoes, eggplant, and bell pepper to the pot. Stir to coat with oil and cook for about 5 minutes, allowing the vegetables to develop some color.
  4. Add liquid and simmer
    Pour in the vegetable broth and bring to a boil. Reduce heat to medium-low, cover, and simmer for about 15 minutes, or until vegetables are tender but not mushy.
  5. Add the curry roux
    Break the curry roux blocks into pieces and add to the pot. Stir gently until the blocks dissolve completely. The sauce will begin to thicken immediately.
  6. Season and finish
    Add soy sauce, mirin, and honey or maple syrup (if using). Stir well and simmer on low heat for another 5-10 minutes until the curry reaches your desired thickness. If it becomes too thick, add a little water.
  7. Serve
    Divide cooked rice among plates or bowls. Ladle the hot curry over the rice. Serve with fukujinzuke on the side if desired. Japanese curry is traditionally eaten with a spoon rather than chopsticks.
