
Turkish Imam Bayildi
Olive oil-braised eggplants stuffed with fragrant vegetables

Prepare the eggplantsCut each eggplant lengthwise, leaving the stem intact. Using a small knife, cut a slit down the middle of each half without cutting through the skin. Sprinkle with salt and set aside for 15 minutes to draw out the bitterness, then rinse and pat dry.

Pre-cook the eggplantsHeat 1/4 cup olive oil in a large skillet over medium heat. Add the eggplants and cook for about 5 minutes on each side until they begin to soften and turn golden brown. Remove and arrange in a single layer in a baking dish.

Prepare the fillingIn the same skillet, heat the remaining olive oil. Add the onions and cook over medium heat until translucent, about 5 minutes. Add the garlic and cook for another minute until fragrant. Add the diced peppers and cook for 3-4 minutes until softened.

Complete the fillingAdd the diced tomatoes, tomato paste, sugar, cumin, cinnamon, salt, and pepper to the onion mixture. Simmer for 10-15 minutes until the mixture thickens slightly. Stir in the chopped parsley and dill, reserving some for garnish.

Stuff the eggplantsGently open the slits in each eggplant half and fill with the vegetable mixture. Pour the water around the eggplants in the baking dish and drizzle with additional olive oil.

Bake the dishCover the baking dish with foil and bake in a preheated oven at 190°C (375°F) for 30-35 minutes, until the eggplants are completely tender and the flavors have melded.

ServeAllow the dish to cool to room temperature or slightly warm. Garnish with the reserved herbs and serve with crusty bread or as part of a mezze spread.
