  1. Sauté the vegetables
    Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery, and cook for 5-7 minutes until softened. Add the minced garlic and Italian seasoning, and cook for another 30 seconds until fragrant.
  2. Prepare the broth base
    Pour in the chicken or vegetable broth and add the diced tomatoes with their juices. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes to allow flavors to meld together.
  3. Cook the tortellini
    Add the tortellini to the simmering broth and cook according to package instructions, usually 3-5 minutes for fresh and 7-9 minutes for frozen, until tender but still firm.
  4. Add the finishing touches
    Stir in the fresh spinach and cook just until wilted, about 1 minute. Remove the pot from heat and stir in the grated Parmesan cheese. Season with salt and freshly ground black pepper to taste.
  5. Serve the soup
    Ladle the hot soup into bowls and garnish with additional grated Parmesan cheese. Serve immediately with crusty Italian bread on the side if desired.
