  1. Prepare the ingredients
    Slice the pork belly into thin, bite-sized pieces. Cut all vegetables according to the ingredient list. Cube the tofu and set aside.
  2. Sauté the pork
    Heat a large pot over medium-high heat. Add the sliced pork and cook until it begins to brown and render its fat, about 3-4 minutes. No need to add oil as the pork will release enough fat.
  3. Add vegetables
    Add the onions and sauté for 2 minutes until translucent. Then add the daikon, carrots, gobo, shiitake mushrooms, and potatoes. Stir-fry for another 3-4 minutes.
  4. Add the dashi and simmer
    Pour in the dashi stock, sake, and mirin. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 15-20 minutes, or until the vegetables are tender.
  5. Add the tofu and miso
    Gently add the tofu cubes. In a small bowl, mix the miso paste with a ladleful of soup broth until smooth. Add this mixture back to the pot and stir gently to incorporate. Simmer for an additional 5 minutes, but do not boil vigorously after adding the miso.
  6. Adjust seasonings
    Taste the soup and adjust the flavor by adding more miso if needed. Remember that miso is salty, so add it gradually.
  7. Serve
    Ladle the hot tonjiru into serving bowls. Garnish with sliced green onions and a sprinkle of shichimi togarashi for those who enjoy a bit of spice.
