Instructions

  1. Prepare the pasta
Bring a large pot of water to a boil. Add 1 tablespoon of salt and the pasta. Cook until al dente according to package instructions, usually 8-10 minutes. Reserve 1/2 cup of pasta water before draining.
  2. Make the tomato sauce
While the pasta cooks, heat olive oil in a large skillet over medium heat. Add sliced garlic and red pepper flakes (if using) and cook until fragrant but not browned, about 1 minute. Add tomatoes, salt, and pepper. Simmer for 10-15 minutes, stirring occasionally, until tomatoes break down and sauce thickens slightly.
  3. Finish the sauce
Reduce heat to low. If using butter, add it to the sauce and stir until melted. Tear most of the basil leaves and add to the sauce, reserving some for garnish. Stir to incorporate and let the basil wilt slightly.
  4. Combine pasta and sauce
Add the drained pasta directly to the sauce in the skillet. Toss to coat evenly, adding a splash of reserved pasta water if the sauce seems too thick. Cook for another minute to let the pasta absorb the flavors.
  5. Serve
Remove from heat and stir in the grated Parmigiano-Reggiano cheese. Transfer to serving plates or a large bowl. Garnish with remaining fresh basil leaves, an extra drizzle of olive oil, and additional grated cheese. Serve immediately.
