  1. Prepare the tom yum sauce
    In a medium saucepan, combine coconut milk, tom yum paste, fish sauce, lemongrass, and kaffir lime leaves. Bring to a simmer over medium heat and cook for 5 minutes to infuse the flavors.
  2. Cook the shrimp and mushrooms
    Add the shrimp and mushrooms to the simmering sauce. Cook for 3-4 minutes until the shrimp are pink and cooked through. Remove from heat and stir in lime juice. Remove lemongrass pieces and lime leaves.
  3. Prepare the taco shells
    Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds per side until soft and pliable, or wrap them in a damp paper towel and microwave for 30 seconds.
  4. Assemble the tacos
    Place warmed tortillas on serving plates. Using a slotted spoon, divide the shrimp and mushroom mixture among the tortillas. Drizzle with additional tom yum sauce from the pan.
  5. Add the toppings
    Top each taco with sliced red bell pepper, purple cabbage, cilantro, and green onions. Add Thai chilies if desired for extra heat.
  6. Serve immediately
    Serve the tacos with lime wedges on the side. Encourage guests to squeeze fresh lime juice over their tacos just before eating for a bright, fresh flavor.
