Crispy tofu and pork belly in a tangy soy-vinegar sauce

Prepare the porkIn a pot, place the pork belly pieces and add enough water to cover. Add bay leaves and half of the crushed peppercorns. Bring to a boil, then reduce heat and simmer for about 30 minutes or until the pork is tender. Remove the pork, drain well, and set aside.

Fry the tofuPat dry the tofu cubes with paper towels to remove excess moisture. Heat vegetable oil in a large frying pan over medium-high heat. Fry the tofu cubes until golden brown and crispy on all sides, about 2-3 minutes per side. Remove and drain on paper towels.

Crisp the porkIn the same pan, add the boiled pork belly pieces and fry until crispy and golden brown, about 5-7 minutes. Remove and drain on paper towels.

Prepare the sauceIn a bowl, combine soy sauce, vinegar, brown sugar, minced garlic, remaining crushed peppercorns, and sliced chili peppers. Mix well until the sugar is dissolved.

Combine everythingIn a large serving bowl, combine the fried tofu and crispy pork belly. Add the sliced red onions and pour the sauce over the mixture. Toss gently to coat all pieces with the sauce.

ServeLet the dish sit for about 5 minutes to allow the flavors to meld. Garnish with chopped green onions before serving. Serve warm or at room temperature as an appetizer or main dish with steamed rice.
