  1. Roast the aromatics
    Heat a small skillet over medium heat. Add the chilies, garlic, and shallots and dry roast until they begin to char and become fragrant, about 3-5 minutes. Remove from heat and let cool slightly.
  2. Prepare the mortar and pestle
    Transfer the roasted chilies, garlic, and shallots to a mortar. If using dried shrimp, add them as well. Pound with a pestle until you achieve a coarse paste. Don't over-grind; some texture is desirable.
  3. Add the seasonings
    Add the palm sugar and continue to pound until it dissolves. Add the fish sauce, lime juice, and tamarind paste (if using). Mix thoroughly with the pestle until well combined.
  4. Heat the mixture
    Heat the vegetable oil in a small saucepan over medium heat. Add the chili paste mixture and cook for 2-3 minutes, stirring constantly to prevent burning. This step helps to meld the flavors together.
  5. Finish and serve
    Remove from heat and let cool. Stir in the chopped cilantro and kaffir lime leaves (if using). Transfer to a serving bowl. Nam Prik can be served at room temperature or slightly warm with fresh vegetables or as a condiment for rice dishes.
