
Thai Massaman Curry with Beef
Rich, aromatic Thai curry with tender beef and potatoes

Prepare the beefHeat vegetable oil in a large pot over medium-high heat. Working in batches, brown the beef cubes on all sides, about 3-4 minutes per batch. Transfer to a plate and set aside.

Create the curry baseIn the same pot, reduce heat to medium and add the thick cream from the top of one can of coconut milk. Add the curry paste and stir continuously for 3-5 minutes until fragrant and the oil begins to separate from the paste.

Simmer the beefReturn the beef to the pot and stir to coat with the curry paste. Add the remaining coconut milk, 1 cup of water, bay leaves, cardamom pods, and cinnamon stick. Bring to a simmer, then reduce heat to low, cover, and cook for 1.5 hours or until the beef is nearly tender.

Add potatoes and onionsAdd the potatoes, onion wedges, fish sauce, tamarind paste, and sugar to the pot. Continue to simmer, uncovered, for 30-40 minutes until the potatoes and beef are fully tender and the sauce has thickened slightly.

Finish the curryStir in the roasted peanuts and simmer for an additional 5 minutes. Taste and adjust seasoning with more fish sauce or sugar if needed. The curry should have a balance of sweet, salty, and tangy flavors.

ServeRemove the bay leaves, cardamom pods, and cinnamon stick. Serve the curry hot over steamed jasmine rice, garnished with additional roasted peanuts and fresh cilantro leaves.
