Instructions

  1. Prepare the rice
Drain the soaked glutinous rice and rinse it thoroughly under cold water until the water runs clear. Place the rice in a steamer lined with cheesecloth or a bamboo steamer lined with banana leaf. Steam over medium-high heat for 20-25 minutes until the rice is cooked and tender.
  2. Make the coconut mixture
While the rice is cooking, in a small saucepan, combine 1 cup of coconut milk, palm sugar, and salt. Heat over medium-low heat, stirring occasionally until the sugar dissolves completely. Remove from heat and set aside.
  3. Mix the rice
Transfer the hot steamed rice to a large bowl. Pour the warm coconut milk mixture over the rice and gently fold it in. Cover the bowl with a kitchen towel and let it sit for 20-30 minutes to allow the rice to absorb the coconut milk.
  4. Prepare the coconut sauce
In a small saucepan, combine the remaining 1/2 cup of coconut milk with the rice flour mixture. Heat over medium-low heat, stirring constantly until it thickens slightly. Add vanilla extract if using. Remove from heat and let cool.
  5. Serve the dish
Mold the sticky rice using a small cup or scoop it onto serving plates. Drizzle with the thickened coconut sauce. Sprinkle with toasted sesame seeds and mung beans if using. Serve with sliced fresh mango on the side for an authentic Thai dessert experience.
