  1. Prepare the dashi
    If using instant dashi powder, prepare according to package instructions to make 1 cup of stock. If using homemade dashi, ensure it's strained and ready to use.
  2. Combine liquid ingredients
    In a small saucepan over medium heat, combine the dashi stock, mirin, soy sauce, and sake (if using). Stir to mix the ingredients thoroughly.
  3. Add sugar and simmer
    Add the sugar to the saucepan and stir until completely dissolved. Bring the mixture to a gentle simmer, then reduce heat to low and cook for 5 minutes to allow flavors to meld together.
  4. Cool the sauce
    Remove the sauce from heat and allow it to cool to room temperature. The flavors will continue to develop as it cools.
  5. Prepare the garnishes
    While the sauce is cooling, grate the daikon radish and squeeze out excess moisture with your hands. Grate the ginger and finely chop the green onions.
  6. Serve the dipping sauce
    Pour the cooled sauce into individual small dipping bowls. Add a small mound of grated daikon, a pinch of grated ginger, and a sprinkle of chopped green onions to each bowl. Serve alongside hot tempura for dipping.
