  1. Prepare your environment
    It's highly recommended to open the surströmming can outdoors due to its extremely pungent smell. Submerge the can partially in a bucket of water before opening to prevent the brine from spraying. Pierce the bulging can with a can opener.
  2. Clean the fish
    Remove the fillets from the can and place them on a cutting board. Clean off any remaining viscera and remove the backbone if present. Rinse briefly under cold water if desired.
  3. Prepare the accompaniments
    Mix the sour cream with crème fraîche and chopped chives in a small bowl. Season with salt and pepper. Arrange the sliced potatoes, red onion, and chopped dill on a serving platter.
  4. Prepare the bread
    If using tunnbröd, spread a thin layer of butter on each piece. If using pita bread, warm it slightly to make it more pliable.
  5. Assemble the traditional wraps
    Place a piece of flatbread on each plate. Layer with sliced potatoes, a few pieces of surströmming, red onion slices, and a generous sprinkle of dill. Add a dollop of the sour cream mixture.
  6. Fold and serve
    Fold the bread around the filling to create a wrap. Serve immediately with lemon wedges on the side for those who want to add a touch of acidity to cut through the strong flavor.
