Traditional fermented Baltic Sea herring with classic accompaniments
Ingredients
Instructions
-
Prepare your environmentIt's highly recommended to open the surströmming can outdoors due to its extremely pungent smell. Submerge the can partially in a bucket of water before opening to prevent the brine from spraying. Pierce the bulging can with a can opener.
-
Clean the fishRemove the fillets from the can and place them on a cutting board. Clean off any remaining viscera and remove the backbone if present. Rinse briefly under cold water if desired.
-
Prepare the accompanimentsMix the sour cream with crème fraîche and chopped chives in a small bowl. Season with salt and pepper. Arrange the sliced potatoes, red onion, and chopped dill on a serving platter.
-
Prepare the breadIf using tunnbröd, spread a thin layer of butter on each piece. If using pita bread, warm it slightly to make it more pliable.
-
Assemble the traditional wrapsPlace a piece of flatbread on each plate. Layer with sliced potatoes, a few pieces of surströmming, red onion slices, and a generous sprinkle of dill. Add a dollop of the sour cream mixture.
-
Fold and serveFold the bread around the filling to create a wrap. Serve immediately with lemon wedges on the side for those who want to add a touch of acidity to cut through the strong flavor.
