
Split Pea Soup with Ham
Hearty, comforting classic soup with smoky ham flavors

Prepare the split peasRinse the split peas under cold water in a colander, removing any stones or debris. Drain well and set aside.

Sauté the aromaticsHeat olive oil in a large Dutch oven or heavy-bottomed soup pot over medium heat. Add the diced onion, carrots, and celery. Cook for 5-7 minutes until vegetables begin to soften. Add the minced garlic and cook for an additional 30 seconds until fragrant.

Add peas and liquidAdd the rinsed split peas, ham bone or ham hocks, bay leaf, dried thyme, and black pepper to the pot. Pour in the chicken broth or water and bring to a boil. Reduce heat to low, cover, and simmer for about 60-75 minutes, stirring occasionally, until the peas have broken down and the soup has thickened.

Prepare the hamRemove the ham bone or ham hocks from the soup. When cool enough to handle, remove any meat from the bone, chop it, and return it to the soup along with the additional diced ham. Discard the bone.

Adjust consistency and seasoningIf the soup is too thick, add more broth or water until desired consistency is reached. Remove the bay leaf. Taste and adjust seasoning with salt and additional pepper if needed, keeping in mind that ham is already salty.

Serve and garnishLadle the hot soup into bowls and garnish with freshly chopped parsley. Serve with crusty bread for a complete meal.
