  1. Prepare the crust
    Preheat oven to 375°F (190°C). Place pie crust in a 9-inch quiche dish or pie plate. Prick the bottom with a fork several times. Line with parchment paper and fill with pie weights or dried beans. Blind bake for 15 minutes, then remove weights and parchment and bake for 5 more minutes until lightly golden.
  2. Prepare the filling
    In a large bowl, whisk together eggs, heavy cream, and milk until well combined. Add nutmeg, salt, and pepper. Stir in the sautéed onions and chopped chives.
  3. Assemble the quiche
    Reduce oven temperature to 350°F (175°C). Sprinkle half of the grated cheese over the bottom of the pre-baked crust. Evenly distribute the diced ham over the cheese. Pour the egg mixture over the ham and cheese, then sprinkle the remaining cheese on top.
  4. Bake the quiche
    Carefully transfer the quiche to the oven and bake for 35-40 minutes until the center is just set and the top is golden brown. The quiche should be slightly wobbly in the center but not liquid.
  5. Cool and serve
    Let the quiche cool for at least 15 minutes before slicing. The quiche can be served warm or at room temperature. Garnish with additional fresh chives if desired. Serve with a simple green salad for a complete meal.
