
Spicy Chicken Arrabbiata
Tender chicken in a fiery tomato sauce with fresh herbs

Prepare the chickenSeason chicken breasts with salt and pepper on both sides. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add chicken and sear until golden brown, about 3-4 minutes per side. Remove chicken from the pan and set aside.

Create the arrabbiata baseIn the same skillet, add the remaining tablespoon of olive oil. Add onions and sauté until translucent, about 3 minutes. Add garlic, chopped chili peppers, and red pepper flakes. Cook for 1 minute until fragrant, being careful not to burn the garlic.

Build the saucePour in the white wine and simmer for 2 minutes, scraping up any browned bits from the bottom of the pan. Add crushed tomatoes, tomato paste, and dried oregano. Stir to combine and bring to a simmer. Season with salt and pepper to taste.

Combine and simmerReturn the chicken to the skillet, nestling it into the sauce. Reduce heat to medium-low, cover, and simmer for 15-20 minutes until the chicken is fully cooked through and tender. If the sauce becomes too thick, add a splash of water or chicken broth.

Finish and serveOnce the chicken is cooked, remove the skillet from heat. Stir in half of the fresh basil and parsley. Serve the chicken with plenty of sauce, garnished with the remaining herbs and grated Parmesan cheese if desired. Pair with pasta or crusty bread to soak up the spicy sauce.
