  1. Prepare the beans
    In a large bowl, mash the black beans with a fork or potato masher, leaving some beans whole for texture. You want a chunky consistency that will hold together, not a smooth puree.
  2. Sauté the aromatics
    Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced bell pepper, red onion, and garlic. Cook until softened, about 5 minutes. Add cumin and smoked paprika and cook for another 30 seconds until fragrant.
  3. Combine the mixture
    Add the sautéed vegetables, chopped chipotle peppers, breadcrumbs, beaten egg, cilantro, and lime juice to the mashed beans. Season with salt and black pepper. Mix thoroughly until well combined. If the mixture seems too wet, add more breadcrumbs.
  4. Form the patties
    Divide the mixture into 4 equal portions and shape into patties about 3/4 inch thick. Press firmly to ensure they hold together. Place the formed patties on a plate and refrigerate for at least 10 minutes to firm up.
  5. Cook the burgers
    Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Cook the patties for 4-5 minutes on each side until crispy and browned. Be gentle when flipping to avoid breaking them.
  6. Assemble and serve
    Place each patty on a toasted bun and add your favorite toppings such as sliced avocado, lettuce, tomato, red onion, and a spicy mayo or sauce. Serve immediately while hot and crispy.
