  1. Prepare the base
    Combine cranberries, sugar, orange juice, orange zest, and water in a medium saucepan. Stir to combine and allow the mixture to sit for 5 minutes to begin dissolving the sugar.
  2. Add the spices
    Add the cinnamon stick, cloves, star anise, nutmeg, and ginger to the saucepan. Stir gently to incorporate all the spices evenly throughout the mixture.
  3. Cook the sauce
    Place the saucepan over medium heat and bring to a simmer. Once simmering, reduce heat to medium-low and cook for 10-12 minutes, stirring occasionally. The cranberries will burst and the sauce will begin to thicken. For a thicker sauce, cook for an additional 2-3 minutes.
  4. Finish and flavor
    Remove the saucepan from heat and stir in the maple syrup. If using, add the Grand Marnier. Carefully remove and discard the cinnamon stick, cloves, and star anise pod.
  5. Cool and store
    Allow the sauce to cool to room temperature - it will continue to thicken as it cools. Transfer to an airtight container and refrigerate for at least 2 hours before serving. The sauce can be stored in the refrigerator for up to 10 days or frozen for up to 2 months.
