  1. Prepare the vegetables
    Finely shred the cabbage using a sharp knife or food processor. Peel and grate the carrot. Finely dice the sweet onion. Combine all vegetables in a large mixing bowl.
  2. Make the dressing
    In a medium bowl, whisk together the mayonnaise, buttermilk, apple cider vinegar, sugar, Dijon mustard, celery seeds, salt, and pepper until smooth and well combined.
  3. Combine and coat
    Pour the dressing over the cabbage mixture and toss thoroughly until all the vegetables are evenly coated with the dressing. Make sure to incorporate the dressing into all parts of the slaw.
  4. Chill and serve
    Cover the bowl with plastic wrap and refrigerate for at least 1 hour (preferably 2-4 hours) before serving to allow the flavors to meld together. The coleslaw will become more flavorful as it sits. Stir again before serving.
  5. Adjust seasoning
    Just before serving, taste the coleslaw and adjust seasoning if necessary, adding more salt, pepper, or vinegar according to your preference.
