
Silog Fried Rice Bowl

Prepare the garlic riceHeat 2 tablespoons of oil in a large wok or skillet over medium heat. Add 6 cloves of minced garlic and sauté until golden brown and fragrant, about 1-2 minutes. Add the cold rice, breaking up any clumps with a wooden spoon. Stir-fry for 3-4 minutes until the rice is heated through.

Season the riceDrizzle soy sauce over the rice and sprinkle with salt and pepper. Continue stir-frying for another 2-3 minutes until the rice is evenly coated and slightly crispy. Transfer to a plate and keep warm.

Cook the proteinIn the same pan, add 1/2 tablespoon oil. If using beef tapa, cook for 3-4 minutes until browned and cooked through. If using tocino, cook for 5-6 minutes until caramelized. For longanisa, cook for 8-10 minutes, turning occasionally until fully cooked and browned on all sides. Remove proteins and set aside.

Fry the eggsAdd the remaining 1/2 tablespoon oil to the pan. Crack eggs into the pan and fry sunny-side up until the whites are set but the yolks are still runny, about 2-3 minutes. Sprinkle with the remaining minced garlic over the eggs during the last minute of cooking.

Assemble the Silog bowlsDivide the garlic fried rice among four bowls. Place a fried egg on top of each rice portion. Add your choice of protein (tapa, tocino, or longanisa) to each bowl. Garnish with sliced tomatoes and cucumbers on the side.

Serve with condimentsServe each Silog bowl with a small dish of vinegar with onions and chili (atchara) on the side. This adds a tangy contrast to the savory flavors of the dish. The dish is typically eaten by mixing all the components together just before eating.
