  1. Brown the meat
    Season beef cubes with salt and pepper. Heat vegetable oil in a large pot over medium-high heat. Working in batches, brown the meat on all sides, about 3-4 minutes per batch. Transfer to a plate and set aside.
  2. Sauté the aromatics
    In the same pot, add the diced onion and cook until softened, about 5 minutes. Add the garlic and ginger, cooking for another 1-2 minutes until fragrant. Stir in the tomato paste and cook for 2 minutes to remove the raw flavor.
  3. Create the peanut base
    Add the diced tomatoes and cook for 3-4 minutes. Whisk in the peanut butter, gradually adding the beef broth to create a smooth sauce. Return the beef to the pot, add bay leaves and the whole scotch bonnet pepper (if using). Bring to a simmer.
  4. Slow cook the stew
    Reduce heat to low, cover, and simmer for 1 hour, stirring occasionally to prevent the peanut sauce from sticking to the bottom of the pot. The beef should begin to become tender and the sauce will thicken.
  5. Add the vegetables
    Add the carrots, sweet potatoes, and cabbage to the pot. Continue to simmer, covered, for another 30-45 minutes until the vegetables and meat are tender. If the sauce becomes too thick, add a little water or broth.
  6. Final seasoning
    Remove the bay leaves and the scotch bonnet pepper. Taste and adjust seasonings with salt and pepper as needed. The sauce should be rich, nutty, and savory with a silky texture.
