Prepare the doughIn a large mixing bowl, combine the flour, sugar, cardamom, and salt. In a separate bowl, dissolve the yeast in warm milk (about 110°F/43°C). Let it sit for 5-10 minutes until foamy. Add the yeast mixture, softened butter, and egg to the dry ingredients. Mix until the dough comes together.

Knead the doughTurn the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Place in a greased bowl, cover with plastic wrap or a damp towel, and let rise in a warm place for about 1 hour, or until doubled in size.

Prepare the fillingWhile the dough is rising, mix the softened butter, brown sugar, and cardamom in a bowl until well combined to create a smooth, spreadable paste.

Shape the bunsAfter the dough has risen, punch it down and roll it out on a floured surface into a rectangle approximately 16×20 inches (40×50 cm). Spread the cardamom filling evenly over the dough. Fold the dough into thirds like a letter, then roll it out again to a rectangle about 12×16 inches (30×40 cm).

Cut and twistCut the dough into 12 equal strips. Twist each strip several times, then wrap it around your fingers to form a knot, tucking the ends underneath. Place the buns on parchment-lined baking sheets, leaving space between each bun.

Second riseCover the buns with a kitchen towel and let rise for another 45-60 minutes, or until puffy and nearly doubled in size.

Bake the bunsPreheat the oven to 375°F (190°C). Brush the buns with the egg wash and sprinkle with pearl sugar. Bake for 12-15 minutes until golden brown. Transfer to a wire rack to cool slightly before serving.
