  1. Prepare the spice paste
    In a food processor, blend the garlic, onion, chilies, and shrimp paste until smooth. If you don't have a food processor, finely chop all ingredients and mix together.
  2. Sauté the spice paste
    Heat vegetable oil in a large pot over medium heat. Add the spice paste and sauté until fragrant, about 3-4 minutes. Add ground coriander and stir well.
  3. Add coconut milk and aromatics
    Pour in the coconut milk, then add kaffir lime leaves and lemongrass. Bring to a gentle simmer, being careful not to boil rapidly as coconut milk can separate.
  4. Cook the vegetables
    Add carrots first and cook for 5 minutes. Then add eggplant, green beans, and cabbage. Simmer for 15 minutes until vegetables are tender but not mushy.
  5. Add tofu and seasoning
    Add the fried tofu cubes to the pot. Season with salt and pepper to taste. Simmer for another 5 minutes to allow flavors to meld together.
  6. Final adjustments
    Taste and adjust seasoning if needed. The curry should have a rich, creamy flavor with a balance of savory, slightly sweet, and mild spiciness.
