Prepare the egg mixtureIn a large, shallow bowl, whisk together the eggs, milk, Parmesan cheese, garlic powder, cayenne pepper (if using), salt, and black pepper until well combined.

Add herbs and cheeseStir in the chopped chives, thyme leaves, and half of the grated Gruyère cheese into the egg mixture, making sure everything is evenly distributed.

Soak the breadDip each slice of bread into the egg mixture, allowing it to soak for about 30 seconds per side. The bread should absorb some of the mixture but not become soggy. Place the soaked bread on a plate while you prepare to cook.

Cook the French toastHeat a large skillet or griddle over medium heat and add 1 tablespoon of butter. Once melted, place 2-3 slices of the soaked bread on the skillet and cook until golden brown, about 3-4 minutes per side. Sprinkle a little of the remaining Gruyère on top of each slice just before flipping.

Finish cooking in batchesContinue cooking the remaining slices, adding more butter to the pan as needed. Keep the cooked slices warm in a 200°F (95°C) oven while you finish the rest.

Serve warmServe the savory French toast immediately, garnished with additional fresh herbs, cherry tomatoes, and microgreens if desired. For extra flavor, drizzle with a small amount of hot sauce or serve with a side of sour cream.
