  1. Sauté the aromatics
    Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and bell pepper, cooking until softened, about 5 minutes. Add minced garlic and cook for another 30 seconds until fragrant.
  2. Brown the meat
    Add ground turkey or beef to the pot and break it up with a wooden spoon. Cook until no longer pink, about 7 minutes. Drain excess fat if necessary.
  3. Add spices and seasonings
    Stir in chili powder, cumin, smoked paprika, and cinnamon. Cook for 1 minute to toast the spices and release their flavors. Season with salt and pepper.
  4. Incorporate pumpkin and tomatoes
    Add the pumpkin puree and diced tomatoes (with their juice) to the pot, stirring well to combine with the meat and spice mixture until everything is evenly incorporated.
  5. Add beans and broth
    Stir in the black beans, kidney beans, and broth. Bring the chili to a boil, then reduce heat to low. Simmer uncovered, stirring occasionally.
  6. Simmer to develop flavors
    Allow the chili to simmer for 30 minutes, stirring occasionally. If it becomes too thick, add a little more broth. The longer it simmers, the more the flavors will develop.
  7. Final adjustments
    Taste and adjust seasoning with additional salt, pepper, or spices as needed. If desired, add a splash of lime juice for brightness or a teaspoon of maple syrup to enhance the pumpkin sweetness.
