  1. Prepare the filling
    In a medium bowl, combine the pulled pork with 1/2 cup BBQ sauce and mix well. If the pork is too dry, add a little more sauce. Set aside.
  2. Assemble the quesadillas
    Lay 4 tortillas flat on a clean work surface. Evenly distribute the BBQ pulled pork mixture over the tortillas. Sprinkle each with the diced red onion, jalapeño, and cilantro, then top with 1/2 cup of shredded cheese per quesadilla. Cover with the remaining 4 tortillas.
  3. Cook the quesadillas
    Heat a large skillet over medium heat. Add 1/2 tablespoon of oil to the pan. Carefully transfer one assembled quesadilla to the skillet and cook for 2-3 minutes until golden brown and crispy. Flip carefully using a large spatula and cook for another 2-3 minutes until the cheese is melted and the other side is golden brown. Transfer to a cutting board.
  4. Repeat the cooking process
    Repeat the cooking process with the remaining quesadillas, adding more oil to the pan as needed. Allow each cooked quesadilla to rest for 1 minute before cutting.
  5. Slice and serve
    Using a sharp knife or pizza cutter, cut each quesadilla into quarters. Serve immediately with sides of sour cream, pico de gallo, additional BBQ sauce, and lime wedges for squeezing.
