Prepare the meatChop the grilled pork belly and pig's ears into small, bite-sized pieces, about 1/4 inch cubes. Set aside in a large bowl.

Create the flavor baseHeat oil in a large skillet over medium heat. Sauté garlic until fragrant, about 30 seconds. Add onions and cook until translucent, about 3-4 minutes. Add chopped chili peppers and cook for another minute.

Combine and seasonAdd the chopped pork to the skillet and mix well with the sautéed aromatics. Season with soy sauce, black pepper, and liver spread. Stir until well combined and the liver spread is fully incorporated, about 5 minutes.

Add acidityPour in the calamansi or lime juice and vinegar. Mix thoroughly and cook for another 3-4 minutes, allowing the flavors to meld together. If using mayonnaise, add it now and mix well for added creaminess.

Serve sizzlingTransfer the sisig to a hot sizzling plate (cast iron works best). If desired, crack a raw egg on top right before serving. The residual heat will partially cook the egg as it's mixed in at the table.

Garnish and enjoyGarnish with additional chopped onions and calamansi or lime wedges on the side. Serve immediately while still sizzling, with steamed rice and cold beer for an authentic Filipino experience.
