  1. Marinate the pork
    In a bowl, combine soy sauce, fish sauce, 2 tablespoons brown sugar, minced garlic, and lemongrass. Add the sliced pork, mix well to coat, and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  2. Prepare the pickled vegetables
    In another bowl, mix the shredded carrots and daikon with rice vinegar and 1 tablespoon brown sugar. Let sit for at least 30 minutes, stirring occasionally.
  3. Cook the pork
    Heat a large skillet over medium-high heat. Remove the pork from the marinade and cook for 3-4 minutes per side until browned and cooked through. Transfer to a plate and let rest for 5 minutes before slicing thinly against the grain.
  4. Prepare the bread
    Preheat oven to 350°F (175°C). Slice the baguettes horizontally, leaving one side attached. Toast in the oven for 5 minutes until slightly crispy on the outside but still soft inside.
  5. Assemble the sandwiches
    Spread mayonnaise generously on both sides of each baguette. Layer the bottom half with sliced pork, drained pickled vegetables, cucumber slices, cilantro sprigs, and jalapeño slices if using.
  6. Serve
    Close the sandwiches and press gently to compact the fillings. Slice each sandwich in half diagonally and serve immediately while the bread is still warm and the pork is hot.
