Instructions

  1. Prepare the cucumbers
Wash and thinly slice the cucumbers (a mandoline works best for consistent thin slices). Place them in a colander, sprinkle with salt, and let them sit for 10 minutes to draw out excess moisture.
  2. Drain the cucumbers
Gently squeeze the cucumber slices or pat them dry with paper towels to remove as much moisture as possible. Transfer to a large bowl.
  3. Prepare the dressing
In a medium bowl, combine sour cream, chopped dill, white vinegar, sugar, lemon juice, black pepper, and minced garlic (if using). Whisk until smooth and well combined.
  4. Combine and serve
Add the thinly sliced onions to the bowl with cucumbers. Pour the dressing over the cucumbers and onions, then gently toss until everything is evenly coated. For best flavor, refrigerate for at least 30 minutes before serving.
  5. Garnish and present
Before serving, garnish with additional fresh dill sprigs. Serve chilled as a refreshing side dish alongside Polish main courses like pierogi, kielbasa, or schnitzel.
