
Polish Apple Pancakes
Fluffy pancakes filled with cinnamon-spiced apples

Prepare the applesPeel, core, and either grate or finely dice the apples. If grating, gently squeeze out some of the excess moisture with a paper towel. Set aside.

Mix dry ingredientsIn a large bowl, whisk together the flour, baking powder, salt, sugar, and cinnamon until well combined.

Combine wet ingredientsIn a separate bowl, beat the eggs, then add the milk, vegetable oil, and vanilla extract. Whisk until smooth and well incorporated.

Make the batterGradually pour the wet ingredients into the dry ingredients, whisking constantly to avoid lumps. Mix until you have a smooth batter, then fold in the prepared apples until evenly distributed.

Cook the pancakesHeat a large non-stick skillet or griddle over medium heat. Add a small amount of oil. When hot, ladle about 1/4 cup of batter for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Flip and finish cookingCarefully flip each pancake and cook for another 2 minutes until golden brown and cooked through. Transfer to a plate and keep warm while cooking the remaining batter.

Serve warmDust the pancakes with powdered sugar and serve warm with maple syrup or honey if desired. Traditional Polish serving includes a dollop of sour cream on top.
