Prepare the poaching liquidIn a large, deep skillet, combine the stock, half of the lemon slices, and a pinch of salt. Bring to a gentle simmer over medium heat.

Poach the salmonGently place the salmon fillets into the simmering liquid. The liquid should just barely cover the fish. Reduce heat to low, cover, and poach for 8-10 minutes, or until the salmon is opaque and flakes easily with a fork.

Start the sauceWhile the salmon is poaching, melt the butter in a separate saucepan over medium heat. Add the shallots and garlic, cooking until soft and fragrant, about 2-3 minutes. Pour in the white wine and simmer until reduced by half, about 3-4 minutes.

Finish the sauceReduce heat to low and stir in the heavy cream, Dijon mustard, and capers. Simmer gently for 5 minutes until slightly thickened. Remove from heat and stir in the chopped dill. Season with salt and pepper to taste.
