Piri Piri Sauce
Spicy Portuguese hot sauce with African roots
Ingredients
Instructions
-
Prepare the chiliesWearing gloves, cut the chilies in half lengthwise and remove the seeds if you want a milder sauce. For a hotter sauce, leave some or all of the seeds in. Roughly chop the chilies.
-
Blend the ingredientsIn a food processor or blender, combine the chilies, garlic, bell pepper, red onion, lemon juice, red wine vinegar, smoked paprika, oregano, salt, black pepper, and cumin. Pulse until you have a coarse paste.
-
Add the oilWith the blender running on low speed, slowly drizzle in the olive oil until the mixture is smooth and well combined. The texture should be similar to a thick hot sauce.
-
Cook the sauceTransfer the mixture to a small saucepan. Add the bay leaf if using. Bring to a gentle simmer over medium-low heat and cook for about 10 minutes, stirring occasionally. This helps meld the flavors and slightly thickens the sauce.
-
Cool and storeRemove from heat and let cool completely. Remove the bay leaf. Transfer to sterilized glass bottles or jars. The sauce will keep in the refrigerator for up to 2 weeks, and the flavor will continue to develop over time.
