Instructions

  1. Prepare the parsley
Wash the parsley thoroughly and pat it dry with paper towels or use a salad spinner. Remove the thick stems and finely chop the leaves until you have 1 cup.
  2. Prepare the garlic
Peel the garlic cloves and mince them very finely. You can use a microplane or garlic press for a finer texture if preferred.
  3. Combine dry ingredients
In a small bowl, combine the chopped parsley, minced garlic, lemon zest, thyme leaves (if using), salt, and pepper. Mix well to ensure even distribution of all ingredients.
  4. Add liquids
Drizzle in the olive oil and lemon juice. Stir to combine all ingredients thoroughly until you have a cohesive, fragrant mixture.
  5. Adjust seasoning
Taste the persillade and adjust the salt, pepper, or lemon juice as needed to achieve your preferred flavor balance.
  6. Use or store
Use immediately as a garnish, flavoring, or crust for meats, fish, vegetables, or potatoes. If storing, transfer to an airtight container and refrigerate for up to 3 days, or freeze in ice cube trays for longer storage.
