  1. Mix the dry ingredients
    In a large mixing bowl, whisk together the flour, salt, and instant yeast until well combined. This ensures even distribution of the yeast and salt throughout the dough.
  2. Add water and form a shaggy dough
    Pour in the warm water and optional vinegar, then stir with a wooden spoon or spatula until a shaggy, sticky dough forms. The dough will look rough and uneven - this is exactly what you want. Make sure all the flour is incorporated, but don't overmix.
  3. First rise (fermentation)
    Cover the bowl with plastic wrap or a damp kitchen towel. Let the dough sit at room temperature (about 70°F/21°C) for 12-18 hours. The dough is ready when its surface is dotted with bubbles and it has more than doubled in size.
  4. Shape the loaf
    Lightly flour a work surface. Gently scrape the dough onto it - the dough will be very sticky. With lightly floured hands, fold the dough over on itself once or twice to create tension. Shape into a round loaf without kneading. If adding wheat bran, sprinkle it on now and lightly press into the surface.
  5. Second rise
    Generously coat a cotton towel with flour, cornmeal, or semolina. Place the dough seam side down on the towel and dust with more flour or cornmeal. Cover with another cotton towel and let rise for about 1-2 hours, until the dough has doubled in size again.
  6. Preheat the baking vessel
    At least 30 minutes before baking, place a heavy covered pot (cast iron, enamel, Pyrex, or ceramic) in the oven and preheat to 450°F (230°C). The pot should be 4 to 6 quarts in size with a lid.
  7. Bake the bread
    When the dough is ready, carefully remove the hot pot from the oven. Slide your hand under the towel and turn the dough over into the pot, seam side up. It may look messy, but that's normal. Cover with the lid and bake for 30 minutes, then remove the lid and bake for another 15-20 minutes until the loaf is beautifully browned.
  8. Cool and serve
    Remove the bread from the pot and place on a wire rack to cool completely, at least 1 hour. This cooling period is crucial as it allows the crumb structure to set properly. The bread will make crackling sounds as it cools - a sign of success!
