  1. Prepare the osmanthus flowers
    Place the dried osmanthus flowers in a small bowl. Pour 200ml of hot water over them and let steep for 10 minutes to release their fragrance and flavor. Strain and reserve both the flowers and the infused water.
  2. Dissolve the agar-agar
    In a medium saucepan, combine the agar-agar powder with 200ml of cold water. Stir well and let it stand for 5 minutes to bloom. Then add the remaining 600ml of water and bring to a boil over medium heat, stirring constantly until the agar-agar is completely dissolved.
  3. Add sweeteners and flavors
    Add the rock sugar, honey, and a pinch of salt to the agar-agar mixture. Stir until the sugar is completely dissolved. Add the osmanthus-infused water, half of the steeped osmanthus flowers, lemon juice, and goji berries if using. Reduce heat and simmer for 2 minutes.
  4. Pour and set the jelly
    Remove the saucepan from heat. Pour the mixture into a square or rectangular mold or individual serving cups. Allow to cool at room temperature for about 15 minutes, then refrigerate for at least 3 hours, or until completely set.
  5. Serve the jelly
    Once set, cut the jelly into cubes if using a large mold. Garnish with the remaining osmanthus flowers, wolfberries, and mint leaves if desired. Serve chilled as a refreshing dessert or snack.
