  1. Prepare the oven
    Preheat your oven to 225°F (110°C). Line a large baking sheet with parchment paper. Draw six 3-inch circles on the parchment paper as templates for your nests, then flip the paper over so the ink won't touch the meringue.
  2. Beat the egg whites
    In a large, clean, and dry mixing bowl, beat the egg whites with a pinch of salt and cream of tartar until soft peaks form. Make sure your bowl and beaters are completely free of grease or the whites won't whip properly.
  3. Add the sugar
    Gradually add the superfine sugar, about 1 tablespoon at a time, while continuing to beat. Beat until the meringue is glossy and forms stiff peaks. This usually takes about 5-7 minutes.
  4. Incorporate final ingredients
    Gently fold in the vanilla extract, white vinegar, and cornstarch using a rubber spatula. These ingredients help stabilize the meringue and create a soft center with a crisp exterior.
  5. Form the nests
    Transfer the meringue mixture to a piping bag fitted with a large star tip. Pipe a circular base following your drawn template, then pipe 2-3 layers around the edge to create walls for your nests. Alternatively, you can spoon the meringue onto the circles and use the back of a spoon to create a well in the center.
  6. Bake the meringues
    Place the baking sheet in the oven and bake for 1 hour and 30 minutes. The meringues should be crisp on the outside but not browned. When done, turn off the oven and leave the meringues inside with the door slightly ajar to cool completely. This prevents them from cracking due to sudden temperature changes.
  7. Prepare the filling
    Whip the cream until soft peaks form. Wash and prepare the berries, slicing larger ones if necessary. If desired, toss the berries with a small amount of sugar to release their juices.
  8. Assemble and serve
    When ready to serve, place each meringue nest on individual serving plates. Fill each nest with a dollop of whipped cream and top with fresh berries. Dust with powdered sugar and serve immediately to prevent the meringues from becoming soggy.
