  1. Prepare the matcha
    Sift the matcha powder into a small bowl to remove any clumps. Add the hot water and whisk vigorously in a zigzag motion using a bamboo whisk (chasen) or small regular whisk until frothy and no lumps remain.
  2. Create the matcha base
    In a medium bowl, combine the matcha mixture with milk, heavy cream, maple syrup or honey, and vanilla extract. Whisk until well incorporated and smooth.
  3. Chill the mixture
    Pour the matcha mixture into a container and refrigerate for at least 10 minutes or until cold. This step can be done ahead of time for a more chilled beverage.
  4. Assemble the float
    Fill two tall glasses halfway with ice cubes. Pour the chilled matcha mixture over the ice, leaving about 2 inches of space at the top of each glass.
  5. Add ice cream and garnish
    Gently place a scoop of vanilla ice cream on top of each glass. The ice cream should float on the matcha latte. Top with a dollop of whipped cream and dust lightly with additional matcha powder.
  6. Serve immediately
    Provide both a straw and a long spoon with each glass. The float should be enjoyed by both drinking the matcha latte and eating the melting ice cream together.
